The Vietnamese sa tế sauce is closer to the Chiuchow/Hokkien shacha sauce. However, the Vietnamese sa tế sauce is less pungent, and often does not contain dried fish and shrimps. It’s also different from Javanese satay sauce which is made from peanuts. True tunas are known by the Vietnamese as cá ngừ đại dương (literally means ocean tunas). Let give this combination a try!
